Peanut Butter Chocolate Chip Shortbread Cookies

Sometimes, I forget that my passion for food began with baking.  I can remember countless afternoons coming home from High School and one of the first things I did was to break out the butter and eggs for cookies and turn on the TV because I couldn’t miss a rerun episode of Saved by the Bell or Full House.  This was typical.  During that time, I played volleyball just about 24/7, so it never occurred to me that making batches upon batches of cookies would inevitably catch up to me.

Now, I have to remind myself every once in a while it’s okay to buy a bag of chocolate chips.  It’s okay to soften a stick of butter.  It’s okay to make the most delectable peanut butter and chocolate chip shortbread cookies… and eat 5 of them a few.  (“Everything in moderation… including moderation”)

This recipe is a bit different from a regular cookie recipe, or any other shortbread for that matter.  First off… I had to get past the fact that there are no eggs, baking power or soda involved.  It felt strange.  There’s a lot less sugar, too.  But anything involving peanut butter and dark chocolate, I’m in.

It’s simple really… Softened, unsalted butter and creamy peanut butter are creamed together until smooth.

Vanilla extract is added.  (Complimentary colors, woo!)

Dry ingredients are whisked together in another bowl and then added to the wet ingredients.

Turn out dough onto plastic wrap (although, I would recommend wax paper).  The dough will be a little crumbly, but with a little patience and “smushing”, it will form into a log.

I’m using a knife as size reference for you, you’re welcome.  Twist ends of wrap and refrigerate for at least an hour.

Although it may not look like it, these are the baked cookies.  They will not brown, spread, or rise… and that’s okay.

Stack your cookies for a pretty picture, pour a glass of milk, and let the shortbread-eating fun begin.  They crumble easily, so be careful!
