Chocolate Sour Cream Bundt Cake

Sometimes… you just need chocolate cake.  GOOD chocolate cake to bring you back to what’s important in life.

At the ripe age of (almost) twenty-five (Virgo power – word to your mother), I am finding that life is at its most confusing point, thus far.  What to do, where to go, who to be with, what to think, is this okay, is that okay, am I getting wrinkles!?  I just need a break every once in a while from reality.

Baking tends to do the trick, most times.  My favorite time is an early weekend morning, while the house is still quiet, drinking coffee and baking in the kitchen.  It’s a time for peace and a time for reflection.  It’s my time.  And as long as it’s my time, there better be chocolate… and lots of it.

This cake is the ticket.  Very rich and moist with a dreamy glaze.  Plus, it’s not too complicated to get started on a pre-caffienated brain.

Collect your ingredients… it’ll be easier in the long-run.

Unsalted butter, cocoa powder, kosher salt, water (not pictured), flour, sugar, baking soda, eggs, sour cream, and vanilla extract… DONE!

Go ahead and prep. those baking pans ahead of time, too.  Butter, flour, you know the drill.

Whisk together the flour, sugar, and baking soda.

Meanwhile, melt butter with the cocoa powder, water, and salt in a saucepan.  Add 1/2 of melted mixture to the dry ingredients.

Whisk together as best you can… don’t break your whisk.  It could be a close call.  Mixture will be clumpy and thick.

Then, add the remainder of butter mixture.  Whisk until it looks wonderful and velvety smoooooth.

Add eggs one at a time, whisking each to blend completely before adding the next.

Lastly, add vanilla extract and sour cream.  Take a moment to create a marbled effect, stop in admiration of the lines created, and then keep whisking until combined.

Pour batter into the prepared pan(s).  Recipe calls for a 10- or 12-cup bundt pan, but I don’t have one of those yet, so a small one and two small loaf pans will do for now.  Bake for 30 minutes (small loafs), and 35 minutes (small bundt), or 40-45 minutes (regular bundt) at 350 degrees.

Presto!  Cool in the pans for a few minutes and turn out onto a cooling rack.  Cool completely before making the CHOCOLATE GLAZE.  That’s right, we’re putting chocolate on chocolate.  The more the merrier.

4 oz. chopped bittersweet chocolate, corn syrup (or agave), heavy cream, and sugar.  This will be easy.

Break out your trusty, vintage, hand-me-down (thanks Mom) Revere Ware saucepan and dissolve the sugar in heavy cream over medium heat.  Once cream is hot and sugar has dissolved, pour it over the chopped chocolate and syrup.  Whisk like a mad-woman until all chocolate is melted.

Drizzle the warm glaze over the cake(s).  It’s okay to lick the bowl afterwards.

Would you look at that.  It’s a thing of beauty.  You know you want your cake to glisten in the sunshine, too.

The recipe is simple, but the outcome is fantastic.  I’ve made this cake a handful of times without fault.  You’re welcome in advance.
