Lemony Shrimp Scampi with Orzo and Spinach

Dinner is done.

This post will be short and sweet because that’s precisely what this dish is kind of like… short aaand savory, not sweet.

Bright, light, and full of flavor.  This is exactly what I look for in a weeknight meal.  The recipe requires simple ingredients, most of which you’ll probably already have on-hand; Orzo pasta, lemons, shallot, shrimp, white wine, and spinach.

Also, there’s no cheese… you’re welcome my friend, Emily.

Dinner comes together in less than 30 minutes.  Serve with more white wine and call it a night.
