Roasted Cabbage Steaks

Cabbage is normally the last thing that comes to mind when scouring the grocery store for a vegetable.  When I think of cabbage, I think of coleslaw… of which I am not particularly fond of.  This is partly due to the use of mayonnaise (bleh) and potential for a raw onion surprise (bleh x 2).

A few weeks ago, a dear co-worker of mine told be about the delicious cabbage “steaks” he had made and insisted I try them.  Bewildered at the thought of roasting cabbage slices, much less even buying it, I thought more about this veggie side dish and made it a few days later.  Cabbage is now my BFF and I am forever changed.

Roasted Cabbage Steaks from Simplified Fest 1

The preparation and ingredients are simple.  All you need is a head of green cabbage, olive oil, garlic, salt, and pepper.  Be sure to buy a regular green cabbage with smooth leaves and not a Savoy cabbage, the kind with the ruffled and ridged leaves.  Extra bonus:  They’re in season!

Peel off and discard a few of the outer leaves of the cabbage, trim down the bottom stalk, and give it a good rinse under cold water.  Thickly slice the cabbage into steaks.  I was able to cut 6 steaks from 1 cabbage.

Lay steaks flat on a parchment-lined baking sheet.  In a small dish, stir together 1-2 minced garlic cloves and maybe 1/4 cup of olive oil.

Brush both sides of steaks with olive oil and season with salt and pepper.

Bake at 400 degrees for approximately 1 hour, 30 minutes on each side.  The edges with be crunchy, while center is soft with a subtle sweetness.  Garlicky and a little sweet… sounds just weird enough to try.  I urge you to make these cabbage steaks alongside your dinner tonight.  Cabbage is brimming with nutrients, fiber, and also very inexpensive.  If you’re not convinced yet, here are Six Reasons to Eat More Cabbage!

Yield: 4 servings as a side
A Simplified Feast original recipe 
 

Ingredients:

1 Green cabbage

1-2 cloves garlic, minced

1/4 cup olive oil

Salt and pepper, to taste

Method:

Preheat oven to 400 degrees.  Peel off and discard a few of the outer leaves of the cabbage, trim down the bottom stalk, and rinse under cold water.  Thickly slice the cabbage into steaks (about 6 steaks from 1 cabbage).  Lay steaks flat on a parchment-lined baking sheet.  In a small dish, stir together 1-2 minced garlic cloves and maybe 1/4 cup of olive oil.  Brush both sides of steaks with olive oil and season with salt and pepper.  Bake at 400 degrees for approximately 1 hour, 30 minutes on each side, or until edges are brown and crispy.  Serve immediately.
